Made from a chicken stock base, Cream of Portobello soup is a delicately flavored creamy white soup. The Portobello mushrooms are sautéed with some finely chopped celery and onion in butter just until they are soft. The chicken stock is added and brought to a full boil, simmered together for about 20 minutes and returned to a full boil. A mixture of 2 tablespoons of cornstarch in water is mixed in and the soup is allowed to boil once more time before adding either a half a cup of fresh milk or cream. A dash of sherry can also be added for taste.
